About Me
My name is Phil, and I’m the owner and sharpener behind Caliber Knife Sharpening.
For me, knife sharpening is much more than simply putting an edge back on a blade. It’s something I genuinely enjoy and take great pride in. There is a tremendous satisfaction in taking a knife that has become dull, damaged, or difficult to use and carefully restoring its edge and performance.
I’ve always believed that if something is worth doing, it’s worth doing properly. That philosophy is at the heart of Caliber Knife Sharpening.
My Approach
I approach every knife individually. I consider the blade, the steel, its intended use, and the condition of the existing edge before deciding how it should be sharpened. I use professional sharpening equipment and carefully controlled techniques, with particular attention to edge geometry, consistency, refinement, and preserving the life of the blade.
It's About the People, Too
But there is another side to this business that means even more to me, the people.
When you hand someone a favourite kitchen knife, an expensive Japanese blade, a hunting knife, or something that has been in your family for many years, you’re placing a certain amount of trust in that person. I respect that trust.
Your knives aren’t treated like numbers in a production line. I personally work on them and give each blade the attention and care I believe it deserves.
Why I Do This
One of the greatest rewards for me is handing a freshly sharpened knife back to its owner and seeing their reaction when they feel how effortlessly it cuts again. Those moments are why I enjoy doing what I do.
I’m proud to have built Caliber Knife Sharpening around something I’m truly passionate about, and I’m grateful for every customer who gives me the opportunity to work on their knives.

Kangaroo tail stropping
The final step in edge refinement
Kangaroo leather is regarded by professional sharpeners as one of the finest natural materials for final edge stropping. Its distinctive texture, noticeably different from cowhide or horsehide, helps clean and refine the apex of an already-sharpened edge, removing loose or weakened remnants without aggressive abrasion.
At Caliber Knife Sharpening, I use genuine Australian kangaroo tail leather as a finishing step for selected knives, mounted or used as a traditional hanging strop.
Not a substitute for proper sharpening
Stropping doesn’t compensate for poor sharpening or incomplete deburring, the edge must already be properly formed and deburred. This step simply provides a final mechanical refinement, without abrasive compounds or altering bevel geometry.
Responsibly sourced
Genuine kangaroo tail suitable for stropping is difficult to obtain. Commercial harvesting is regulated in Australia, and I source my material through a qualified Australian supplier in accordance with applicable requirements. Usable, premium-quality pieces are limited and specialized.
